- 3 tablespoons Dijon mustard

- 4 6-ounce salmon fillets, skin removed
- 2 tablespoons olive oil
- 1 pound sweet potatoes, sliced ½” thick
- 1 pound Brussels sprouts, trimmed and halved if large
- 1 medium red onion, sliced
- 1 teaspoon kosher salt
- ½ teaspoon pepper
- Old Bay seasoning
- 2 scallions, thinly sliced
Instructions
- Preheat oven to 425°F (218°C). Place a large baking sheet in the oven to heat.
- In a small bowl, whisk together the maple syrup, Dijon mustard and soy sauce.
- Place salmon in a resealable bag and add half the maple mixture. Reserve the other half for the vegetables.
- Allow the salmon to marinate while you prepare the vegetables.
- In a large bowl, toss sweet potatoes, Brussels sprouts and red onion with olive oil, salt and pepper.
