Description
These Cheeseburger Sliders are small in size but huge in flavor, thanks to a caramelized onion and prune topping I call a Magic Elixir.
Ingredients
FOR THE SPICE BLEND
- 1 teaspoon salt
- ½ teaspoon granulated garlic
- ½ teaspoon freshly ground black pepper
- 1/4 teaspoon paprika
FOR THE BURGER SAUCE
- ½ cup mayonnaise
- 2 tablespoons finely chopped dill pickles
- 1 teaspoon hot sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon dill pickle juice
FOR THE BURGERS
- 28 ounces 80/20 ground beef
- 8 small burger buns, gluten-free or regular, halved
- 2–4 tablespoons olive oil, divided
- 2 teaspoons Worcestershire sauce, divided
- 8 ounces sliced cheddar cheese, divided
- 8 tablespoons Sweet & Savory Caramelized Onion Magic Elixir, warm or room temperature
- 1 ripe tomato, sliced and lightly salted
- Iceberg or romaine, finely shredded
- Pickle slices, for garnish
Notes
Preheat the oven to 200°F (or the lowest temperature available) to keep finished sliders warm.
Make the spice blend: Combine the salt, garlic, pepper, and paprika in a small bowl and set aside.
Make the special sauce: Mix the mayonnaise, chopped pickles, hot sauce, Dijon, and pickle juice in a bowl. Set aside.
Form the patties: Divide the ground beef into eight equal portions (about 3.5 ounces each) and loosely roll into balls. Shape each into a patty slightly larger than your buns and season evenly with the spice blend.
Arrange the bun halves on a baking sheet and place in the oven to toast gently.
Heat a large skillet over medium heat and add 1–2 tablespoons olive oil. Cook four patties at a time (use a second pan if needed). Immediately drizzle 1/4 teaspoon Worcestershire sauce over each patty. Cook until well seared and partially cooked, about 4 minutes.
Flip the patties and top each with about a tablespoon of the onion-prune Magic Elixir and 1 ounce of cheddar. Cover and cook 2–3 minutes more, until the cheese melts and patties reach your preferred doneness.
Transfer cooked patties to a clean sheet tray and keep warm in the oven if cooking in batches. Repeat with remaining patties.
To assemble, spread the special sauce on the bottom buns, add shredded lettuce, tomato, and pickles, top with a patty, then the top bun.
