A layered egg dish combining the best of bread pudding and an omelette—perfect for brunch.

Ingredients

  • 1 tbs olive oil, divided
  • 4 slices hearty white bread, cut into 1″ cubes
  • 12 eggs
  • 1/2 cup half and half
  • Salt and pepper
  • 2 garlic cloves, minced
  • 1 cup leftover steak, chopped
  • 3 oz shredded cheese (Blarney Castle or similar)
  • 2 scallions, chopped

Instructions

  1. Preheat the oven to 450°F.
  2. In a large bowl, whisk the eggs and half-and-half until smooth and pale yellow. Season with salt and pepper; set aside.
  3. Heat 1 tablespoon of oil in a large oven-safe skillet over medium-high heat.
  4. Toast the bread cubes in the skillet until lightly browned on all sides.
  5. Push the bread to the edges of the skillet, add the chopped steak and garlic to the center, and cook about one minute until fragrant.
  6. Carefully pour the egg mixture over the bread and steak.
  7. Let cook for a minute, then use a rubber spatula to run along the bottom a few times to break up any curds forming.
  8. Cook 3–5 minutes, continuing to run the spatula through the mixture so it sets evenly.
  9. Allow to cook another 3 minutes without stirring, then sprinkle the cheese on top.
  10. Using an oven mitt, transfer the skillet to the oven and bake 7–10 minutes, until the eggs are puffy and lightly golden at the edges.
  11. Remove from oven and cool 5–10 minutes before turning out onto a serving tray. Sprinkle with sliced scallions and serve.
