Classic Homemade Carrot Cake Recipe with Cream Cheese Frosting

Hey PBJ’s! I’m back with a dessert recipe: homemade carrot cake. I’d been meaning to share a carrot cake for a long time, but since I’m not a huge sweets person I kept putting it off. Today I’m sharing a delicious, unique carrot cake recipe I think you and your family will love. I don’t claim to have been baking carrot cake forever, but after testing and tasting several versions, this one has become a favorite.

My mom’s co-workers begged for a Carrot Cake

My mother’s co-workers loved my lemon bundt cake, so they asked her if I could make another cake for the office — this time a carrot cake. Because I am diabetic I try to limit sweets, so I usually taste a bite and my mom takes the rest to work. She sets the cake on the lunchroom table and everyone finishes it off.

I had never made carrot cake professionally, but it’s a recipe I wanted to publish because so many people enjoy it. After trying a beloved version sold at our church, I was inspired to create my own version. I researched common ingredients, ordered samples from a few bakeries to compare textures and flavors, and adjusted the recipe until it felt right. I gave pieces to several carrot cake lovers and they asked for more — so I think this recipe is a keeper.

Recipe Ingredients:

Dry Ingredients

  • All-Purpose Flour: The main structure of the cake. I tried cake flour and didn’t like the crumb it produced.
  • Baking Powder & Baking Soda: Both are leavening agents. Baking soda reacts with acidic ingredients like buttermilk to help the cake rise and become light.

  • White and Brown Sugar: White sugar sweetens while brown sugar adds moisture and a hint of molasses flavor.

  • All-Purpose Flour: Lightly dusting the oiled pan with flour creates a reliable nonstick barrier.

Frosting Ingredients

  • Pecan Syrup (optional): Simple syrup or pecan syrup can thin and smooth the frosting.
  • Cream Cheese: Balances the cake with a tangy, creamy frosting.
  • Whole Milk: Used to adjust frosting consistency.
  • Vanilla Extract: Adds flavor boost to the frosting.

Cake Topping

  • Crushed Walnuts or Pecans: For decorating the top and sides of the cake.

Making a Moist Cake

Vegetable oil is the best single ingredient for moisture, but too much can make the cake greasy. To achieve moistness without excess oil, combine oil with other moist ingredients such as applesauce and buttermilk. For this carrot cake I use vegetable oil, applesauce, and buttermilk together. The oil gives the most moisture while buttermilk and applesauce contribute depth of flavor and a tender crumb.

Carrots and Alternatives

  • If using small bagged carrots, pulse them in a blender just a few times — don’t overblend into juice.
  • Avoid pre-shredded carrots from a bag when possible; they can be drier or too coarse for a tender cake.

How to Make Homemade Carrot Cake

  1. Add dry ingredients (flour, baking powder, baking soda, spices, salt) to a large bowl through a strainer, then whisk until combined.
  2. Melt the butter and let it cool slightly.
  3. In a separate bowl, combine the wet ingredients (sugars, oil, applesauce, buttermilk, melted butter, eggs, vanilla) and mix on low speed until smooth.
  4. Peel and finely grate the carrots, then fold them into the wet ingredients.
  5. Combine dry and wet ingredients and mix just until incorporated. Scrape the sides and bottom of the bowl with a spatula to ensure no dry pockets remain.
  6. Preheat the oven to 350°F (175°C).
  7. Grease both cake pans with a light coating of oil, spray with cooking spray, then dust with a thin layer of flour and tap out the excess.
  8. Pour the batter evenly into the prepared pans. Lift and drop the pans an inch above the counter a few times to release air bubbles.
  9. Bake for about 1 hour and 5 minutes, or until a skewer inserted into the center comes out clean or with a few moist crumbs.
  10. Cool on a rack for a few minutes, then invert to remove cakes from pans and let them cool completely for about 30 minutes.
  11. Frosting: Beat cream cheese, confectioner’s sugar, milk, syrup (optional), and vanilla on low speed until smooth and spreadable.
  12. Once the cakes are fully cooled, frost the top of the bottom layer, chill until the frosting firms, then add the top layer and finish frosting the sides and top. Chill again to set the frosting.
  13. Grind or crush the walnuts until they resemble coarse sand, and press them onto the sides and top of the frosted cake. Optionally garnish with a little shredded carrot.
