
Gluten Free Chocolate + PB Banana Bread
Chocolate + PB Banana Bread = a nutritious and festive treat. This gluten-free loaf is simple to make and fills the kitchen with an irresistible aroma while baking. Makes about 10 servings.

Ingredients
- 4 large ripe bananas, mashed well with a fork
- 4 eggs, at room temperature
- 1/2 cup peanut butter (or almond butter)
- 1 Tbsp vanilla extract
- 1/4 cup coconut oil, melted
- 1/2 cup coconut flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 Tbsp ground cinnamon
- 1/4 tsp sea salt
- 4 oz high-quality dark chocolate chips

Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a 9×5″ loaf pan with coconut oil.
- In a large bowl, mix the mashed bananas, eggs, melted coconut oil, vanilla extract, and nut butter until combined.
- In a separate bowl, whisk together the coconut flour, cocoa powder, ground cinnamon, baking soda, baking powder, and sea salt.
- Add the dry ingredients to the wet ingredients and stir just until combined—avoid overmixing.
- Fold in the dark chocolate chips.
- Pour the batter into the prepared loaf pan, spreading it evenly. Sprinkle a few extra chips on top if desired.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Remove from the oven and let cool on a wire rack before slicing.
