Ingredients

  • 4 large ripe bananas, mashed well with a fork
  • 4 eggs, at room temperature
  • 1/2 cup peanut butter (or almond butter)
  • 1 Tbsp vanilla extract
  • 1/4 cup coconut oil, melted
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 Tbsp ground cinnamon
  • 1/4 tsp sea salt
  • 4 oz high-quality dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×5″ loaf pan with coconut oil.
  2. In a large bowl, mix the mashed bananas, eggs, melted coconut oil, vanilla extract, and nut butter until combined.
  3. In a separate bowl, whisk together the coconut flour, cocoa powder, ground cinnamon, baking soda, baking powder, and sea salt.
  4. Add the dry ingredients to the wet ingredients and stir just until combined—avoid overmixing.
  5. Fold in the dark chocolate chips.
  6. Pour the batter into the prepared loaf pan, spreading it evenly. Sprinkle a few extra chips on top if desired.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Remove from the oven and let cool on a wire rack before slicing.
