These muffins come together fast, bake up light and tender, and feel homemade despite using a store-bought muffin mix. They’re perfect for breakfasts, brunches, or even breakfast-for-dinner nights.

Lately our family has leaned on quick breakfast favorites like pancakes, muffins, and waffles served with eggs — they’re reliable, fast, and satisfying. For these muffins I used an Enjoy Life Foods muffin mix and enhanced it with a few pantry ingredients. The result tastes homemade: tender crumb, just-sweet-enough, and studded with dairy-free chocolate chips and plump cranberries.

Enjoy Life Foods’ baking chocolate is a go-to in many allergy-friendly kitchens because it’s dairy-free and free from many top allergens. In this recipe I used mini chocolate chips because my kids prefer them, but regular chips or chunks work nicely too — just increase the amount slightly if you like more chocolate in each bite.

Because the products used are free from gluten, dairy, wheat, peanuts, tree nuts, egg, soy, fish, and shellfish — and made without casein, potato, sesame, coconut, and sulfites — these muffins are a thoughtful option for households with common allergies. Gluten Free Cranberry Chocolate Chip Muffins (vegan)

Ingredients

  • 1/2 cup dried cranberries
  • 1/4 cup water
  • 1 box Enjoy Life Foods muffin mix
  • 1/3 cup brown sugar
  • 1/2 cup Enjoy Life Foods mini chocolate chips
  • 1 cup water
  • 1/3 cup avocado oil
  • 2 tsp vanilla extract

Instructions

  • Add the dried cranberries and 1/4 cup water to a bowl and let sit for 20 minutes. Drain and set aside.
  • Preheat oven to 350°F (175°C). Spray a muffin tin with nonstick spray or line with paper liners.
  • In a large bowl, combine the muffin mix, brown sugar, and chocolate chips. Add the 1 cup water, avocado oil, and vanilla extract and stir until fully combined. Fold in the drained cranberries.
  • Divide the batter evenly among 12 muffin cups. Bake at 350°F for 14–18 minutes or until a toothpick inserted in the center comes out clean.
  • Let the muffins cool in the pan 10 minutes, then transfer to a wire rack to cool completely. Store in an airtight container for up to 3 days.

Notes

These muffins freeze well. Cool completely, then freeze in a freezer bag for easy reheating.
