We often walk past fennel in the produce aisle and wonder what to do with those pale white-green bulbs. Mildly aromatic and subtly sweet, fennel is surprisingly versatile. You can enjoy it raw for a crisp, refreshing bite—perfect with dips or in salads—or cook it to release its fragrant, savory juices.
In this simple side dish, sautéed fennel pairs with tender asparagus and chewy goji berries, finished with a splash of balsamic vinegar to marry the flavors. Each ingredient contributes nutrients and texture, making this an appealing, healthy accompaniment to many meals.
