This is one of my go-to recipes on busy days when I still want something that tastes homemade. It’s a family favorite for game days, casual gatherings, or weeknight dinners — easy to prepare, satisfying, and always popular with guests.
Suggestions and Tips:
- Extra cheesy: sprinkle a little additional cheese on top of the tacos before baking. A Mexican blend works great, but any melty cheese will do.
- Add diced jalapeños or corn to the filling for extra flavor and texture. The sweet pop of corn pairs nicely with the savory beef and beans.
- Leftovers reheat well in an air fryer, oven, or a hot skillet. Reheating restores crispiness and melts the cheese again.
- For more heat, stir a little hot sauce into the taco sauce before dipping or choose a spicy taco sauce.

Baked Beef and Bean Soft Tacos

These baked beef and bean soft tacos combine seasoned ground beef, refried beans, and melted cheese, baked to a golden finish. Ideal for family meals, parties, or game day.
Ingredients
- 1 lb ground beef
- 1 tbsp taco seasoning
- 1/4 tsp salt, or to taste
- 2 tbsp chopped onion in jalapeño and olive oil (or 1/4 cup chopped onion)
- 1–1½ cups refried beans
- 12 fajita-size flour tortillas
- 1/2 cup taco sauce (for dipping or brushing)
- 1 tbsp olive oil (for brushing)
- 1–1½ cups shredded cheese (Mexican blend or any melty cheese)
Homemade Taco Seasoning Mix – 2 TBSP
- 1 tbsp chili powder
- 1 tsp paprika (smoked or sweet)
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp oregano
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat oven to 400°F (200°C). For the crispiest bottoms, bake directly on a regular nonstick baking sheet rather than parchment, which can trap steam and soften the base.
- Cook the beef: In a skillet, add the ground beef, chopped onion (or onion in jalapeño and olive oil), taco seasoning, and salt. If using raw onions, sauté them first in a little oil, then add the beef. Cook until browned and cooked through.
- Assemble: Spread a layer of refried beans on each tortilla, add a portion of the cooked beef, then sprinkle with shredded cheese. Fold each tortilla like a quesadilla. Lightly dip or brush both sides with taco sauce.
- Brush with olive oil: Lightly brush the tops of the folded tacos with olive oil to promote even browning.
- Bake: Place tacos on the baking sheet and bake 12–15 minutes, until golden and slightly crisp around the edges.
- Serve: Serve hot with sour cream, guacamole, queso, chopped tomatoes, cilantro, and lime wedges if desired.
Homemade Taco Seasoning Mix
This simple mix replaces store-bought packets and stores well.
To use:
- Use about 1 tablespoon of the seasoning mix per pound of meat, or adjust to taste. Store extras in an airtight jar for up to 6 months.
