Why You’ll Love This Recipe

  • Restaurant-style crispness—these fries develop a crispy exterior and a fluffy interior, much like pub or restaurant fries.
  • Less mess and smell—air frying gives you the fried texture without deep-frying oil splatters or lingering odors.
  • Flexible seasoning—the base recipe is minimal, so you can easily experiment with different herbs and spices to make them your own.

Ingredients

A full ingredient list with exact measurements is in the recipe card below.

Two russet potatoes, seasoning, and a bottle of olive oil.
  • Potatoes—Russet or Idaho potatoes are ideal. Their dense texture and lower moisture content help produce crispy fries.

Recipe Variations & Modifications

  • Seasoning ideas—start with garlic salt and cracked black pepper, or try smoked paprika, seasoning salt, dill pickle salt, or an Italian herb blend for different flavor profiles.

A potato half being cut into strips.

Step 1. Wash the potatoes and pat them dry. Cut each potato in half lengthwise, then into quarters lengthwise. Slice the pieces into approximately 1/4″ strips.

Step 2. Trim or slice the strips to your preferred fry width so the pieces are fairly uniform for even cooking.

Step 3. Check that the strips are mostly the same size so they cook evenly—perfection isn’t necessary, but consistency helps.

Step 4. Place the cut potatoes in a large bowl and cover with cold water. Soak for at least 15 minutes, or for a few hours if time allows.

Step 7. Preheat the air fryer to 380ºF. Lightly spray the basket, then arrange a single layer of fries without overcrowding—avoid touching for the crispiest result.

Step 8. Air fry for 10 minutes, then check. If they need more color or crunch, shake the basket and cook an additional 3–5 minutes. Remove any smaller pieces that are done sooner, and repeat in batches until finished.

Pro Tip

Soaking the potatoes in cold water for at least 15 minutes removes excess starch, which helps prevent soggy or prematurely browned fries and yields better crisping.

How to Serve These French Fries

These fries pair well with burgers and sandwiches of all kinds. Serve them alongside grilled or turkey burgers, chicken or salmon burgers, BLTs, egg salad sandwiches, or wraps. Offer ketchup, ranch, or your preferred dipping sauce on the side.

Storage, Freezing & Reheating

  1. Store: Keep leftovers in an airtight container in the refrigerator for up to 5 days.
  2. Freeze: Spread fries on a baking sheet in a single layer and freeze until partially firm (about 1–2 hours). Transfer to a freezer bag and store up to 4 months. Thaw in the fridge overnight before reheating.
  3. Reheat: Heat fries in the air fryer at 350ºF for 3–5 minutes until warmed and crisped.

Frequently Asked Questions

How much time do fries take in an air fryer?

At 380ºF, expect 10–15 minutes per batch depending on your preferred level of crispness.

Why soak potatoes in water before air frying?

Soaking removes excess starch and surface sugars, helping the fries brown evenly and become crisp rather than soggy.

Do I need oil to cook fries in the air fryer?

A small amount of oil helps the fries brown and prevents sticking. I recommend tossing the potatoes in oil and spraying or brushing the basket lightly.
