Do you have a Bean Pot?

A bean pot or any microwave-safe covered casserole dish works perfectly for this recipe. Many bean pots are ceramic and dishwasher-safe; some are cast iron, so always check the manufacturer’s label to confirm microwave safety. If you don’t own a bean pot, a microwave-safe covered baking dish or casserole will work just as well. Don’t worry about the name—what matters is that the dish can be covered and is safe for microwave use.

Key to Success #1 – Use the Best Chicken

Salsa Chicken adds excellent flavor and is a convenient make-ahead option for many Mexican-inspired meals. It works beautifully in these enchiladas. You can prepare Salsa Chicken in an Instant Pot or slow cooker and freeze portions for quick weeknight dinners. If you’re short on time, a drained can of quality canned chicken is an acceptable substitute. Choose a trusted brand and drain well before adding it to the dish.

If you use prepared Salsa Chicken, aim for roughly 2 cups for this recipe. The shredded chicken mixed with salsa provides savory, slightly spicy notes that pair well with cheese, enchilada sauce, and the salty crunch of corn chips.

Key to Success #2 – Add the Chips Last

To keep the Fritos from becoming soggy, heat the enchilada sauce, tomatoes, and cheese first, then add the chips for the final few minutes of microwaving. You can also reserve a handful of crushed Fritos to sprinkle on top just before serving for extra texture and crunch.

Key to Success #3 – Top It With Some Yum

For a finished look and extra richness, add more shredded cheese on top and briefly broil the bean pot in your oven for 2–3 minutes until the cheese is bubbling and browned to your liking. Serve with classic toppings such as sour cream, extra salsa, sliced jalapeños, or your favorite hot sauce.
