I’d been working on a gingerbread cookie dough for a while that was perfectly fine but lacked a certain spark. Nothing I tried made the flavor sing until I added a cheesecake filling. The combination surprised me: the cookie dough became more interesting when shaped into a little cup, baked, and then filled. The ginger comes through warmly while the vanilla cheesecake keeps the sweetness balanced, giving each bite a satisfying depth of flavor.

For a bright, peppery ginger flavor I use both fresh grated ginger and ground ginger. If you don’t have fresh ginger, simply increase the ground ginger slightly and consider a pinch of allspice or cinnamon for an extra layer of warmth. Adjust spices to suit your taste — these small tweaks let you customise the cups for different occasions.

These gingerbread cheesecake cups can be made full-size or as petite mini versions for a buffet or party platter. For a lighter cookie case, press the dough thinner and add a little more cheesecake filling. I kept mine slightly chunky to showcase the ginger, with just enough cheesecake to temper the sweetness. For a twist, mix cocoa powder into the filling or melt in a few squares of chocolate for a richer, more decadent version. Fresh or frozen raspberries also pair wonderfully with ginger and can be added on top or served alongside for a tart contrast.
These bites were given a thumbs-up by my resident taste tester, who even enjoyed one cold from the fridge for breakfast the next day. Store the finished cups in the refrigerator; they will keep well for a couple of days in an airtight container. They also freeze nicely — freeze unfilled cookie cups and fill them after thawing for best texture.

Ingredients
Dough
- ½ cup 56g coconut flour
- ¼ cup erythritol (or sugar substitute)
- ¼ cup 56g unsalted butter, softened
- 1 egg, beaten
- ½ teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon fresh grated ginger
- 1 teaspoon ground ginger
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
Filling
- 4 oz 112g cream cheese, softened
- 2 tablespoons erythritol (or sugar substitute)
- 2 tablespoons double cream
- 1 teaspoon vanilla extract
Instructions

Preheat the oven to 180°C / 350°F.

In a bowl, combine the coconut flour, erythritol, baking powder, ground spices and salt.

Add the softened butter, beaten egg, fresh grated ginger and vanilla. Mix until a soft dough forms. If the dough feels too dry, add a small splash of cream or milk.

Line a muffin tin with six paper cases.

Divide the dough into six equal portions and roll each into a ball.

Press each ball into a case, spreading the edges up the sides and creating a deep “well” in the centre to hold the filling.

Bake for 18–20 minutes, until the cookie cases are golden and set. Remove from the oven and allow to cool completely in the tin.

While the cases cool, blend the cream cheese, erythritol, double cream and vanilla until smooth and creamy. Taste and adjust sweetness if needed.

Pipe or spoon the cheesecake filling into the cooled gingerbread cups. Chill for 30 minutes if you prefer a firmer texture.

Serve chilled or at room temperature. Enjoy!
Notes
Variation ideas: stir a teaspoon of cocoa into the filling for chocolate-ginger cups, or fold in a few raspberries for a fruity twist. For mini portions, press the dough thinner and reduce baking time slightly.
Storage: Keep refrigerated in an airtight container for up to 48 hours. Unfilled cookie cases freeze well; store in a sealed container and fill after thawing.
