Ingredients

For the Red Velvet Cake

  • 1.5 cups maida (all-purpose flour)
  • 2 tbsp cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 cup milk
  • 1 tbsp lemon juice
  • 6 tbsp oil
  • 1 tsp vanilla extract
  • 1 tbsp red food colour

For the Cream Cheese Frosting

  • 160 g cream cheese, softened
  • 20 g butter, softened
  • 440 g icing sugar, sifted
  • Zest and juice of 1 lemon

For the Chocolate Disc

  • 100 g white chocolate, melted
  • 50 g dark chocolate, melted

For the Sugar Syrup

  • 1/3 cup hot water
  • 3 tbsp sugar

Instructions

For the Red Velvet Cake

  1. Prepare the buttermilk: mix warm milk with lemon juice and let it sit for 5 minutes.
  2. Sift the dry ingredients (flour, cocoa, baking soda and salt) into a bowl. Add sugar and stir to combine.
  3. In a separate bowl, mix the oil, vanilla, red food colouring and the prepared buttermilk until uniform.
  4. Make a well in the dry ingredients, add the wet mixture and fold gently to form a smooth batter.
  5. Pour into a 13×9 inch baking tray and bake in a preheated oven for 8–12 minutes (about 10 minutes worked for me). Use the toothpick test to check doneness.
  6. Remove the cake from the tray immediately and let it cool completely on a wire rack.

For the Cream Cheese Frosting

  1. Beat the softened butter and cream cheese until smooth and light.
  2. Add half the lemon zest and juice and beat until incorporated.
  3. Add the sifted icing sugar gradually and beat to form a smooth, pipeable frosting.
  4. Adjust consistency: add more sugar if too runny, or more lemon juice if too thick.

For the Chocolate Disc

  1. Spoon melted white chocolate onto parchment paper and spread to form a disc. Tap the parchment to smooth the surface and allow the chocolate to set completely.
  2. Use melted dark chocolate in a piping bag to write a greeting (for example “Happy Diwali”) on the set white chocolate disc.

For the Sugar Syrup

  1. Stir the sugar into hot water until the sugar dissolves completely. Set aside to cool slightly.

To Assemble

  1. Use a cookie cutter to cut round cake layers to match the size of your mason jar.
  2. Place a cake round in the jar and moisten with simple syrup.
  3. Pipe a layer of cream cheese frosting on top of the cake round.
  4. Repeat layering cake, syrup and frosting until the jar is filled. Finish with a cake layer on top.
  5. Place the chocolate disc on the top layer, close the jar and attach a personalized note before gifting.
