I opened the spice cabinet and tested combinations until I landed on a balance of sweet and smoky flavors.
The base of dark brown sugar provides sweetness without overpowering, while smoked paprika adds color and that signature smoky note. Garlic and onion powders give depth, dry mustard brings a subtle tang, and chili powder supplies mild warmth. If you prefer more heat, add 1/4 to 1/2 teaspoon of chipotle chili powder for a smoky kick.

Once the spices are combined, rub the mix over the chicken and grill. Because the rub contains sugar it can char if exposed to high flames, so watch the grill closely and move pieces away from flare-ups as needed. - 2 t. onion powder
- 1 t. garlic powder
- 1 t. chili powder (for a spicy rub, add 1/4 t. chipotle chili powder).
- 1 t. salt
- 1/4 t. fresh ground pepper
