Chipotle Sweet Potatoes with Bacon

Ingredients
- 4 large sweet potatoes, peeled and cubed
- 4 tablespoons butter
- 1 1/2 to 3 teaspoons chipotle pepper, chopped
- 1/2 to 1 teaspoon adobo sauce, from can of peppers
- 1 teaspoon salt
- 3 strips bacon, cooked and crumbled
- 1 green onion, chopped
Instructions
- Fill a saucepan with about 3 inches of water, cover, and bring to a boil.
- Peel the sweet potatoes and cut them into 1-inch cubes. Place the cubes in a steamer basket.
- Once the water is boiling, reduce to a simmer and position the steamer basket over the water with the lid on (water should be at least 2 inches below the basket).
- Steam for about 20 minutes or until the potatoes are fork tender.
- Transfer the potatoes to a bowl. Add butter and mash with a potato masher. Stir in chopped chipotle peppers, adobo sauce, and salt. Adjust chipotle to taste. Transfer to a serving bowl and top with crumbled bacon and chopped green onion.
