Does Dirty Rice Contain Liver?

Traditional Creole dirty rice often includes minced chicken liver, but this recipe omits it for simplicity. If you enjoy chicken liver, add about ½ cup minced along with the pork sausage, or use 1 cup or more to replace the sausage entirely.

Why Use Frozen Vegetables?

Frozen diced vegetables are a convenient time-saver when you need dinner fast. They often contain mostly onion; if you prefer more bell pepper, use a fresh mix of onion, bell pepper and celery instead.

Instant Pot Dirty Rice turns a classic Creole dish into a quick and easy pressure-cooker meal or side.

Equipment

  • 6-quart Instant Pot Pressure Cooker

Ingredients

  • 2 cups Rice
  • 1 pound Pork Sausage (such as Jimmy Dean)
  • 2 cups Seasoning Blend (frozen mix of onion, bell pepper and celery)
  • 1.5 teaspoons Creole Seasoning Salt Blend (such as Tony Chachere’s)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Better Than Bouillon, chicken flavor
  • 2 cups Water
  • 1 Bay Leaf

Instructions

  • Rinse rice until the water runs clear and set it aside to drain.
  • Press the Sauté button on the Instant Pot. Add the pork sausage and cook until mostly browned, about 6 minutes.
  • Add the frozen seasoning blend and sauté for about one minute, stirring to combine.
  • Stir in the Creole seasoning, garlic powder and Better Than Bouillon, and sauté another minute.
  • Add the rinsed rice and water so the liquid just covers the ingredients. Stir well.
  • Press Cancel to reset the Instant Pot.
  • Place the bay leaf on top of the water without stirring.
  • Check the lid gasket and vent, place the lid on, set the valve to Sealing, then select Manual/Pressure Cook on High for 6 minutes. Allow a full natural release; total time including pressurizing and release will be about 25 minutes.
  • When finished, press Cancel, remove and discard the bay leaf, and fluff the rice with a fork.
  • Makes about 8 servings.

Notes

Serve as a main or side dish. Garnish with parsley or sliced green onions.

To use fresh vegetables, chop 1 onion, 1 bell pepper and 2 celery ribs.

Ground beef or turkey can substitute for pork sausage. For a traditional version, substitute 1 cup minced chicken liver if desired.
