Cook Time: 5 minutes
Servings: 4 blondies
Calories: 88kcal
Ingredients
- 56 grams coconut flour (about 1/2 cup)
- 10 grams baking powder (about 2 tsp)
- 1/4 tsp salt
- optional dry spices (cinnamon, nutmeg, or similar) for extra flavor
- 2 large eggs, room temperature
- 61 ml coconut milk or other milk of choice (1/4 cup)
- 2 tsp vanilla extract
- 80 grams keto maple syrup (about 1/4 cup)
- 3 oz keto white baking chips or other keto-friendly add-ins (optional)
Instructions
-
Preheat an air fryer to 325°F (160°C) for at least 5 minutes. If you don’t have an air fryer, preheat the oven to 350°F (175°C). Lightly grease four 6 oz ramekins or silicone muffin cups. Sift the coconut flour, baking powder and salt into a large bowl. Stir in any dry spices you like. Add the eggs, milk, vanilla and keto maple syrup, mixing until you have a smooth batter.
-
Fold in the baking chips or other add-ins if using. Divide the batter evenly among the prepared ramekins (about 6 tablespoons per ramekin) or place 3–4 tablespoons into each muffin mold. Smooth the tops with a butter knife so they are flat and even.
-
If desired, sprinkle extra chips or toppings on each blondie. Air fry at 325°F for 5–8 minutes, or until the tops turn golden and a toothpick comes out mostly clean. If baking, place in the oven at 350°F for 15–20 minutes, or until golden and set.
-
When cooking is complete, open the air fryer and let the blondies sit inside for 5 minutes to firm up. Remove the ramekins or molds and transfer to a wire rack. Cool another 5–10 minutes or until firm. Serve warm or let cool completely before serving.
